{Sweets} Banana Cream Pie Minis


My hubby loves banana cream pie -- he requests it anytime I make dessert. I had planned on making "banana cream pie minis" for Father's Day, but I never got around to it {one too many glasses of wine the night before may have had something to do with it -- ooops ;-}.

Now that I'm a stay-at-home mama for the summer {YAY -- loving every second of it!}, I have a little more time, and made these minis for my hubby the other night. Super easy and a fairly low-fat treat!

Ingredients:
~ 1 box vanilla pudding
~ 1 tub fat free coolwhip
~ Nilla wafers
~ Banana, sliced
~ Stemless wine glass {or any other glass -- wine, martini, etc}
** Optional** Chopped candy pieces {Baby Ruth, Snickers, etc}

Directions:
1. Prepare pudding according to directions on box.
2. Layer bottom of glass with pudding. Next add some coolwhip.
3. Arrange Nilla wafers around inside perimeter of glass.
4. Add another layer of pudding & coolwhip.
5. Arrange bananas around inside perimeter of glass.
6. If room, do another layer of pudding & coolwhip, making sure coolwhip is your last layer {you can throw some more bananas in there too -- I did!}.
7. Add one last Nilla wafer on top for garnish & chopped candy pieces if desired.
**Makes approximately 6 minis**
8. Serve & enjoy!

**I had some leftover pudding, so I made Dean some old-school pudding pops with some popsicle molds I bought from Target's dollar bins ;-}

{St. Patrick's Day} Shamrockin' Dessert!


Top o' the mornin' to ya'll! I have a festive St. Patty's dessert idea to share {I made these the other night for a girls' night}. It was ridiculously easy -- I layered brownies, chocolate pudding, and coolwhip in footed glasses. You could also layer in some crushed oreos too or anything else you wanted.

Taking inspiration from TomKat's adorable St. Patty's wreath {never did get around to making it}, I simply cut burlap {which I already had in my fabric trunk} in thin strips, tied it around each glass and tucked a sparkly shamrock I bought from Joann's Fabric store in the knot. Then I added little toppers to each dessert by gluing green embellishment balls leftover from some Christmas crafts to a lollipop stick and then sticking them in the middle of each dessert. PIECE OF CAKE!


**You could make this kind of dessert for any occasion. Not to mention, they'd look fabulous on a dessert/sweets table. I'm thinking poundcake, strawberries, blueberries and coolwhip for July 4th. Or red and green jello with coolwhip for Christmas. Ooooohhhh, the possibilities are endless. Kiddies would love these simple dessert treats too!

{Sneak Peek} Mini Desserts


I've been trying to do a little each night to prepare for W & W this weekend, so I'm not rushing on Friday & Saturday. So tonight I started putting together my dessert table and just happened to snap a quick shot of these tiny little spoons I ordered {they are sitting inside a shot glass just to give you an idea as to their accurate size}. Cute, huh!?! They will be accompanying a mini dessert that I will be making for the table. Can't wait to eat one on Saturday...they are my new fav fall treat!

...and MINI DESSERTS are one of my newest obsessions ~ LOVE!
