{Recipes} Turkey, Brie & Pesto Flatbread Panini


I'm about to share with you one of the BEST sandwiches I've ever eaten. My whiz-in-the-kitchen husband made these absolutely delicious paninis for us this weekend for dinner. I requested he make them again tonight for dinner. And I'm taking leftovers for lunch tomorrow. I think I'm addicted.

First he made pesto, which I LOVE!

Ingredients:
~ 2 cups fresh basil leaves, tightly packed
~ 3 cloves garlic, peeled
~ 1/2 cup pine nuts
~ 1/2 tsp. salt
~ 1/2 cup EVOO
~ 1/2 cup parmesan cheese

Directions:
1. Put all ingredients except EVOO into food processor.
2. Pulse dry ingredients and slowly add in EVOO until at desired texture.

Next, you put together your sammie, which includes the following:

Ingredients:
~ Indian flatbread {you can find this in Shoprite in the bakery section near the baquettes {called Fabulous Flats}
~ oven-roasted turkey breast lunch meat
~ brie cheese, thinly sliced
~ EVOO

Directions:
1. Spread the pesto on both pieces of flatbread
2. Layer one slice of flatbread with turkey and sliced brie
3. Very lightly brush the outsides of the sammie with EVOO
4. Place in panini press for approximately 8-10 minutes or until the lunchmeat and brie are hot all the way through {we used our George Forman mini grill b/c we don't have a panini press....worked like a charm!}
5. Slice, serve and ENJOY!

**Bo made roasted asparagus to go with our paninis and it was such a YUMMY dinner!

  1. i love pesto. but i don't have a food processor. i think i'm gonna buy one though. do you have one that you recommend kate?

  3. Ame~ I can't find my food processor, so we actually used our blender. Not the greatest but it worked fine. I can't remember what brand my food processor is but usually Cuisinart and/or KitchenAid brands do well with consumer ratings.
